Guest Blogger: About Corn Waffles

In the spirit of the waffle posts from last Sunday I invited my mom to share her Corn Waffle recipe with the story of where it originated. - Suz

Henry's first wife Lorraine made Corn Waffles and Pancakes for the family, as well as crepes. Jo Anne gave me the recipe for crepes but I never asked her for Lorraine's recipe for the waffles and pancakes. Henry told me she "just put some whole kernel corn in the batter". Here is the recipe. I don't fix them very often or when I do I sometimes just add corn in the batter that I fix for him. I made them more often when you children were home.


Recipe: "Oh Boy Waffles"
2 1/4 c. flour (can use 1/2 white and 1/2 whole wheat)
4 t. baking powder
3/4 t. salt
1 1/2 T. sugar
2 beaten eggs
2 1/2 c. milk
3/4 c. salad oil
1 c. whole kernel corn (add at the last)

Measure dry ingredients in a bowl and whisk together. In a separate bowl measure wet ingredients except for the corn. Whisk together until well blended and pour over the dry ingredients. Whisk until just barely blended and add the corn. The batter is quite thin and will come out of the baker crispy on the outside and should be eaten immediately. ...and enjoy! (The left-overs freeze well and can be toasted lightly for a quick breakfast; they're good too.)

NEWS RELEASE: In-N-Out Burger to Locate in Draper

DRAPER, Utah. Draper City announces the owners of In-N-Out Burger have submitted plans for construction of a restaurant in Draper. The restaurant will be located in the Draper Peaks Shopping Center, visible from I-15, at 12195 So. Factory Outlet Dr. In-N-Out Burger is known for using fresh, never-frozen meat and fresh-cut, never-frozen fries.

No Wafflers Here

While there are waffles, and waffles, there are no wafflers here. We're revamping Emily and my office into a space for yoga and meditation. The whole family is helping. I started thinking about this last fall, then paused not sure of myself, then the overtime hit. I finally started clearing out the closet space in the office yesterday, and today the bookshelves are migrating out too.

The Zen Habits post: The Number One Dream Killer: Doing What Works caught my attention. How often do we waffle over doing something? What else stops us from doing the things we dream about? Food for thought.

Snickerdoodles

I seem to have lost the "Harmons" recipe for Snickerdoodles, but I did find a pretty decent recipe on "All Recipes" (do you use that site?) These cookies are made with shortening and butter, so you get a pastry-like texture. I meant to make cookies at the beginning of the week for packing lunch from home, but work's still busy. At least on Friday we'll have homemade goodness!

Homemade Oreo's with Cream Cheese Frosting

So how does your baking go? I love to bake. While it is not the usual thing at our house, a few weeks ago I was able to catch some baking time before Em got home from school. The chocolate cookies were out of the oven, with time to cool, before school let out.

I first made these on a snowy day with one of my friends, Mary Gardner, who worked at Alert with me, this was her recipe. (Thanks Mary!)

Oreo's
1 package Devils Food cake mix
2/3 C shortening
2 eggs

Mix ingredients, roll dough into cookie balls. Bake at 350 for 7-8 minutes. Cool. Make cookie sandwiches with vanilla or cream cheese frosting.
