Smoothies
Last Sunday Emily whipped up some fruity, frozen goodness (part of some make-up work for school she had missed). She brought me a frosty glass complete with a bendy straw. She also made some world class no-bake cookies! She is thinking up some summer plans for her cookie baking.
So many of our family have had migraines. I never knew what you all had to go through until I've watched my sweet daughter experience it. She saw a specialist last week and has some tests pending.

Tuesday Night Hike: The Living Room
Once upon a time there was a living room in the mountains. It sounds like the start of a children's story. Large flat rocks made up the sofas. Comfy stone reading chairs sat like thrones overlooking a giant lake and sparkling city... there was only one way to get there, by following a winding, rocky path lined with nodding yellow flowers past the shoreline of an ancient lake.
Last night my friend Kristi and I went to the Sierra Club, Tuesday Night Hike. The hike was to the "Living Room" up above the research park, near the University of Utah. There were all sorts of flowers along the way, Mule Ears were all over the mountainsides and we passed some other flowers I didn't recognize. Both low growing, one looked kind of like a pink/purple sweet pea and the other had several large white blossoms and a sweet, almost spicy scent.
The Living Room is perched on a west-facing mountain and the chairs are made from stacked stones. When I got there the sun was low on the horizon and everybody else had already arrived. I think it was the second arrival for one of the group who had come to check on Kristi and I. As the sun crept closer to the land it turned the city below hues of glowing gold. It was good to visit the Living Room.

Peanut Butter Cookies
What do the best peanut butter cookies I've ever made have to do with Golem and Wolverine? It gets curioser, and curioser... (and yes I did bake wheat bread about 2 weeks ago, but that's another story for another day)
So, last night Eric shared a You Tube video with us that kind of dashed our dreamy Wolverine visions of Hugh Jackman. Don't miss The Boy From Oz. After that we watched a LOTR fan film The Hunt for Gollum. Not bad. Then we watched a few minutes of The Legend of the Seeker which you can watch for free on Hulu. The Seeker is based on the book The Eye of the World by Robert Jordan.
All of this entertaining media has led me down the path to baking some comfort food which will subsequently lead me down the path to the eliptical and yoga tonight. The comfort food? Peanut Butter cookies. The flourless kind. I get it. Really. I mean how do you bake without flour? I had my doubts, but it worked! I was looking for something sort-of-healthy, and with low points for Weight Watchers. They're not too bad as far as points go, 3 points each. (Found the recipe on All Recipes)
Peanut Butter Cookies (flourless)
1/2 c white sugar
1/4 c brown sugar
1 c peanut butter
1 egg
1 t vanilla
1/2 t baking soda
Mix it all up, drop spoonfuls on cookie sheet and press down with fork. 350 degrees 8-10 minutes or until done. Double the batch if you want 2 dozen.
